Smoked Oyster Appetizers

The inclusion of smoked sea salt is certainly an important factor in these… one that people won’t quite be able to put their finger on but will find the alluring flavor sensual and addicting. If you’ve never had smoked oysters or think you don’t even like oysters, don’t be afraid. I implore you to try these. I’m confident you’ll become a huge fan. The combination of flavors here makes the whole experience pretty hard not to love. You’ll see what I mean.

 

Smoked Oyster Appetizers

1 tube Ritz crackers

8 oz. cream cheese

black pepper

red onion — very thinly sliced (so you can see through them)

1 ripe avocado — very thinly sliced

1 can smoked oysters — well drained and drizzled with

lemon juice and

coarse smoked salt

Instructions

Layer all ingredients in order, ending with the salt. Make lots, because they will disappear fast.

I cut the cream cheese into 1/3 inch slices and then spread evenly onto the crackers. An 8 oz. package will be more than enough for one can of oysters, one avocado and one tube of crackers.

The red onion should be sliced so thinly that you can see through it, and don’t be afraid to be generous with it; they other flavors keep it very mild tasting.

Cut the avocado in half lengthwise, remove the pit and halve again lengthwise. Then slice it crosswise into 1/8 inch slices.

Open the can of oysters, drain them on paper towel to remove as much oil as possible. They can then be drizzled with lemon juice and sprinkled with the smoked salt before placing onto the crackers.
