Avocado Crostini

This is one of the easiest, most delicious appetizers on the planet. So quick to put together and great for a spring or summer day out on the terrace. Or porch. Or deck… or whatever you have. This proves that most times, the simpler, the fresher, the better when it comes to food. It doesn’t look like much, but it packs a huge wallop in flavor! I got this out of Bon Appétit and it has become a favorite regular at our house. (Don’t skip the crushed red pepper – just a tiny sprinkling makes all the difference!)

Avocado Crostini

Ingredients:

Rustic Bread (any kind to make a good crostini – I often just use a French baguette)

1 Garlic clove cut in half

Good Olive Oil

Avocados (scooped out and sliced or diced)

Sea Salt

Crushed Red Pepper

Directions:

Throw eight slices of bread on the grill. (You can toast in oven on sheet pan as an option – I usually do this in the winter!)

When they begin to take a char, take them off and rub one side of each with a cut clove of garlic. Layer the toasts with buttery avocado slices, douse them with good extra-virgin olive oil, and finish with a sprinkling of sea salt and crushed red pepper flakes.
